Are you looking to make your dinner a little bit more fun and break the shackles on your regular routine? Chicken Fajitas are becoming a family staple in recent years as they can be affordable, healthy, simple and exciting. They really give the weekly food rota a kick of flavour. The most exciting thing about the Mexican dish is that they are incredibly versatile. You can make the dish your own depending on how you like your food; mild, spicy or maybe something a bit more left field. Fajitas will be able to find a way into your meal schedule.

The Prep

When cooking fajitas there are some musts you have to do, then you can always adapt the formula to make the meal fit your liking. Although you may picture fajitas to be very extravagant, you can make them from scratch from ingredients you will most likely have around your house.

Ingredients (Serves 3)

Tortillas x 6

Chicken Breast (diced) x 2

Red Onion (sliced) x 1

Red Pepper (sliced) x 1

Paprika

Cumin

Coriander

Garlic Cloves (crushed) x 2

Olive Oil

Lime

Tabasco

To get it started make sure you leave the meat out of the fridge for a long time prior to cooking, this will get it to room temperature so it cooks through to the middle easier. Make sure you have preheated the oven to 200 degrees. You will need to wrap your tortillas in some tin foil and heat them up before serving.

Get all your spices and mix them together in a bowl, one heaped tablespoon of paprika and one of coriander, a pinch of cumin and the crushed garlic. Then add the liquid elements; the lime, 4-5 drops of the tabasco and 4 tablespoons of olive oil. MIx this all in with the chicken, onions and peppers before cooking.

Heat your griddle pan until smoking and then add the chicken and marinate. Keep everything moving at high heat until you get a nice charred effect of the chicken. Make sure the chicken is cooked by cutting into the biggest chunk and making sure it’s cooked right through.

Making Fajitas Your Own

Now that’s the standard way to make chicken fajitas, the way we all know and love but there are loads of fun ways to make your fajitas stand out. Looking for them to be spicy or make sure they’re flavour filled? Then there are other things you can throw in the mix.

Fajitas are famous for filling the appetites of people who love spice. There are many different ways to go about this. People looking for a more intense heat could add chilli powder into the initial marinate. This will make the chicken itself very fiery. If you’re looking for more of a subtle kick to the dish a spicy salsa or a few jalapenos will be able to have you control the heat of your fajitas.

People looking for a milder taste will still be able to mix it up with their fajitas. Sour cream and guacamole are fajita favourites and bring a cooler, smoother taste. Adding salads such as lettuce and cucumbers will moisten up the wrap and make for a lighter bite.

Bring a modern favourite into your home by incorporating the Mexican dish into your repertoire. This will make the weekdays fly by bringing exciting food for yourself and your family. Make cooking feel less like a chore and get excited by the evening meal again with this easy to make food that is a trip for the tastebuds. Make the meal your own by adding as much spice as you like, or making a mellow meal.
