This glorious rib steak (sometimes referred to as the Cowboy Steak) is a firm favourite on the ‘other side of the pond’, which in recent years has found its way into various chains of steakhouses across the UK. From the forequarter rib section of the cattle, there aren’t many cuts you can get from the cow in total, due to it’s hearty size. The meat from the animals ribs aren’t as muscular as those on the back, and so the flesh is deep, savoury and moist, with tenderness coming from the marbled fat.
